The Challenge
A gelateria in 182 square metres at the new Sydney Fish Markets, delivered by Unita in twelve weeks with interiors by Luchetti Krelle. Every part of it is on show to a queue, and a food production space carries a hygiene standard ordinary construction cleaning does not meet. The back of house has to pass an inspection before the doors open at all.
The Solution

Staged so production areas were finished last and stayed sealed until the operator took the keys.
- Window and facade cleaning
Glass display cabinetry and glazing brought up without residue, the surfaces every customer in the queue stares at.
- Caulking
Back of house joints sealed to the standard the food inspection demands.
Display cabinetry, stainless, terrazzo and floors detailed to opening standard. A supervisor signed the room off against the scope, so the operator inherited a space ready for its first inspection.
